What bug is this?

Only seem to find them and only one or two when im butchering a chicken, can't find a single one on a live chicken.

That looks like lice. Google bird lice or chicken lice. They might be easier to see on dead chickens because they tend to move around more when the bird is dead. If it's lice and you're not seeing them on your other birds, then their infestation is minor. I'd get them treated before it becomes a problem!
