What color are these birds?

I know these birds are EEggers. A roo and a hen. But what color are they? Is this a lavender or a blue?

Any ideas what I might get if I mate him with my partridge EE?

Since they are Easter Eggers (mixed breed birds), they don't fit any specific variety. The color that they come closest too, though, is probably Blue, with lots of red/gold leakage.

I don't know enough about chicken genetics to tell you what you would get by crossing these birds with other EE. However, I'm sure there would be very interesting results!

It means ditto or they agree with the quoted text. So since they are EE, there is no color standard for them. You never know what you're going to get when you cross an EE with another bird.
