What do I do with these eggs?

I'm completely showing my ignorance here. We are first time quail owners. Our female passed away and we got a new female about 3 weeks ago. I just found 3 eggs in their house. No idea how long they've been there. We've never had a female lay before. What in the world do we do with these eggs? Do we try to let het hatch them? My son got excited and removed the eggs and then put one back in the house, so we currently have one in the house and two on the counter. What should we do? We have never owned any type of bird before and just kind of came into the male Quel and as I said our original female passed away so we're new to every bit of . any advice? Anybody?
 
Your choice, you can eat them or try to let her hatch them. Not knowing how old they are, if you decide to eat them, I'd crack them in a separate bowl first.
 
Do you have a male quail in with her? Or was she previously housed with male quail before arriving? If not, then the eggs likely won't hatch even if she did sit on them... The eggs are mighty tasty though!
 
If you suspect that they've been breeding you could try incubating them, Coturnix quail (i'm assuming thats the kind you're keeping) don't normally incubate they're own eggs so you would need an incubator. Personally I would wait to incubate any just so the fertility becomes a little more consistent, or you could just go ahead and eat them if you like.
