I cracked this egg and it looked all veiny and weird. what's up with that? I gave away some eggs that were in the same batch. I hope they are not bad!
I will try to post a pic.

The "stringy" bits coming of the yolk is the
Chalaze (also known as chalaza). The chalaze is a one of the two spiral bands of tissue in an egg that connect the yolk to the lining membrane at either end of the shell. The "veining" on the yolk itself is odd. When an egg starts developing the embryonic disk (little white dot or bullseye normally seen on the yolk) starts "expanding", but this is only
noticeable on day 2 of incubation. I will see if I can find more about this, but it doesn't look like normal embryo development.

The longest they sit in the nesting box is 2 days. Could they start developing that quickly?

It depends on how hot the nesting boxes are, and how long hens sit on the eggs... When incubating eggs, you can see veins on the first day, so I would assume that, if the eggs are sitting for two days, they could begin to develop veins... I'd start collecting them once or twice daily, so that the eggs can't begin to develop (I currently check them 3-7 times a day, but I kind of enjoy it... It's weird, but I like it when I gather eggs, and end up getting warm eggs because I know that they are extremely fresh...)
