I could be way off base, but it looks like it could be some natural behavior that has gotten him food in the past, and now he's "working it". I could be wrong though. That just looks like a possibility to me. He didn't snatch up one of the crumbs.

Maybe he's warning them away? I kinda doubt that though, since he turned his back on them and isn't showing typical goosey warning behaviour -- though I don't know if he would anyway.

I'd love to know though.

And whatever the reason, they ARE beautiful geese. Love the coloring.
