People keep saying that call duck eggs are hard to hatch and not good for beginners but what makes them so challenging?

Their teeny tiny itty bitty bills can't always reach to get the job done as far as hatching goes. Ducks (waterfowl on general) require different humidity to be successful. Patience is key and knowledge on helping, but not too sooner too much to avoid injured, deformed ducklings or killing them because of mistakes made when helping.

They have a very short bill. It is difficult for them to chip out of the egg.

Yea thats what i heard but does that mean they can die inside the egg? Is there a way you can help them out without causing a problem?

Yes short bills can cause them to never hatch.

Yes with lots of knowledge and experience one can help. As I said above, it takes patience and knowledge to not help too much, or too soon. You can kill a duckling just as easily by helping and not knowing what you are doing.

I know that if they stop pipping for 24 hours you can help them, right? and you just go along the top of the egg with the point of a screw or something? Is it ok to do that?

you can help them out of the egg just need to make sure your hands are clean and the surrounding environment is as sterile as possible so they don't get germs on them while their yolk is exposed

Since they are so small they get tired very quickly and it seems like they just "Give-up."

I suggest buying Adults or older Ducklings. Because Day-old call ducklings are still very very fragile for a couple weeks.
I had put over 50 some eggs from my call ducks in the incubator and didn't get any to hatch, 99% of them were teeny tiny (Fully developed) and they just didn't pip. They would pip the membrane but they tired out and didn't pip the egg shell.
