What should get? type of rabbit

Ok I am getting some newzealand rabbits this week and the person with giant rabbits contacted me back, should I get the trio of the newzealand just incase the other rabbits don't pan out then kill off the male if I get the larger buck? I only need one male and have only enough room for one right now, can you eat a one year old rabbit?

you can eat an older bunny but youll probably want to make stew out of him in a crockpot, by that age there getting tough and need to be slow cooked.
