Daylight savings has me thinking about eggs. I have one mature hen and 3 that are about 7 months. I know adults will stop or almost stop laying in the cold months, but I have heard that newer layers will sometimes lay through their first winter. I live in Southern TN, very mild falls and winters (80s predicted the next few days 🙄), would you guess I may get some eggs still?

I think you will be okay, I have been putting a light on my chickens some times it doesn't take much, if you put a 15W light in your coop even that will help.

Yes.
It's about the length of days, not the temps.

Adding lights can help, but they need to be fairly bright and on a timer.
Here's a pretty good article on supplemental lighting.

Well I have 1 old gal, and 5 young pullets! Been getting a single egg a couple of times a week for a few weeks. Yesterday, I got two!!!! So I am hoping that those pullets are coming into lay, and probably more of them will start laying.

I am hoping for enough eggs for the us (two) soon.
