what should i not feed my chickens?

I am new to chickens, while it seemed easy, it is obviously more complicated than people think! I just read in another post, that potato skins are not good for them. So what else should I not feed them? And can they have leftover mashed potatoes without skins, or potatoes all together? Please help keep me from poisoning my chickens! And are they smart like horses and won't eat what's bad for them (of course unless they are not cared for and thus starving) any and all info and advice is welcome! Thanks for all your help!
