What would eat everything but the crop?

Something got into my coop--which I thought was secure. It is in a barn in a renovated horse stall, concrete floor, barn boards halfway and then chicken wire..but I was sadly mistaken. It snuck in through a rat hole I found and all that was left was the crop and espohagus. It even ate my 2 month old Austrolorp in an elevated nesting box! Since then we have reinforced even more with concrete and hardware cloth and have set humane traps out---one for the rats inside and a bigger one for whatever outside. Whatever is around is taking the cat food out of the trap without setting it so I am guessing I need to cover the sides of that with hardware cloth too. I also now have the radio playing all the time and the coop light on---have a Yard Sentinel coming today. My birds are my pets and I don't want to lose another one! What would come in like that and eat everything but the crop? Thanks.
 
So sorry for you I lost a chicken Rhode Island Red to a raccoon in the night. My coop was not secure and its was a noob mistake and in the morning she was dead and the raccoon bit a chunk of her neck to kill her and there was bite marks on her stomach. The next night it struck again, we heard the screaming of the chickens in our backyard and grabbed a flashlight, turned on the porch lights and saw our Americauna, Caramel at the end of the run and my Cream Legbar, Rocky sitting on the ground with her feathers on the ground. She wasn't dead, but she was so scared that she wouldnt roost or move her legs at all...paralyzed. Good thing is, she was outside a running around the next day.
