crossed my mystery roo (Could be a bad hatchery del, red sex link or columbian rock) with one of my Easter Egger pullets? Would the result yield me blue/green egg layers? Here is a picture of the mystery roo.

It depends on what your EEs are laying.
The roo probably came from a brown egg. So if you crossed a blue-laying EE with him, the offspring would lay greenish/olive-colored egg.

Great! I think we might keep him and hatch chicks next spring if one of my girls goes broody. Now lets just hope my EE lay blue eggs.
