whats the longest to keep the cornish before butcher?

I will be processing cornish at 12 weeks not 8... we decided to get the largest roasters possible. They are all up and walking. What dize dressed chicken do you expect? 8 lb roaster? 10 lbs? We will do a smaller size next time.

Let me know what is the oldest to keep them? thanks

We processed most of ours at about 11 weeks, and they averaged 6 lbs. dressed. Still have 20 to go, and they don't seem to be growing much any more,or as hungry as they were before. We will be finishing the rest this weekend, and they will be 12 weeks old. They are Cornish X's. I think the average live weight was around 8 lbs. We did the 12 on 12 off. Another person that ordered at the same time was feeding all they could eat and he processed his live weight 8 lbs. at 8 weeks, 50 of them were also eating 50 lbs. of food a day the last week! Good luck.

ETA-we also grilled (beer butt) our first one last night, it was a smaller one that ended up with leg problems, it was 3.5 lbs. dressed. It was still YUMMO, even though it was smaller!!!

I raised 50 White Mountain Broilers(a strain of cornish x) this spring. I had 43 of them butchered at 8 weeks old and they dressed out at 5 - 6 lbs. average. Some were bigger at 6.5 lbs, very few dressed out smaller than 5 lbs. Very hardy birds. I only lost 3(1 to the dog, 1 got caught under the feeder, and 1 died of ??) I butchered 2 myself at 4 weeks(not alot of flavor), then did 4 more at 7 weeks. These were good. I then took the rest to the butcher lady who charged me $1.75 per bird to butcher and get ready for the freezer.
 
Last batch we butchered at ten to twelve weeks. We don't do ours all at once so we started at ten weeks and finished at 12 weeks. They dressed out in the 11 1/2 to 13 1/2 pound range. Some may have been a little larger. We didn't weigh them all. We raised ours on turkey starter, turkey grower, and broiler finisher. I don't know if that makes a difference. They made nice big juicy roasters. I have cooked turkeys that were smaller. I had a little trouble cooking them long enough. If I didn't get them quite done enough they weren't as tender as I would like but they were still good. I am going to cook one up this weekend and do it on the rotisserie. Haven't done that yet. Ours were the Barbeque Special from Murray McMurray.
