Not sure if this would also classify Xmas song but I LOVE Ave Maria.....by various artists such as Placido Domingo, Luciano Pavarotti, Jessye Norman, Kathleen Battle, Kiri Te Kewana.

For pop, I love John Denver and the Muppets Xmas shows! They are a riot when they all sing 12 Days of Xmas!
