My three week olds are able to now be outside during the day. I’m so over the indoors brooder mess and wondering when they could go without feed or water at night?

They don't need food or water at night. They should be resting.
The only time I've ever left lights on so they could eat at night was for 3 days after receiving shipped chicks to help them recover from the shipping stress.
