It seems everytime I go talk to the chickens and look around, I've been finding 2 or 3 eggs each time.
We started hatching chicken eggs on the 20th of August and they've started laying. At first I found hen made nests with a couple of dozen in each. Since then they lay in 3 certain spots any time of the day. Should I collect eggs in the evening when they go to bed?

Really it is not a big deal, unless you are in freezing temperatures. A lot of people keep eggs on the counter, just fine. If I am there, I check and pick up the eggs. If they sit a overnight, I don't worry about it.

I have found that a large group of eggs, and the chicken gods in the right position can kind of, sort of, maybe, might cause a bird to go broody.

Since it's really cold these days, I check several times a day. When I first started getting eggs, I noted who laid, the weight, and the approximate time. That info helped me know when those pullets would lay the next day.

It's not the same with this year's pullets, and my then-pullets-now-hens are more sporadic.

Usually I collect at the end of day when I lock up for the night.
If there is an issue, or it's freezing(like now) I check more frequently during the day.
I'm in Australia, Summer atm, 40C lol. Even the lowest temperature in Winter is only -4 maybe.
I'll collect eggs when they put themselves to bed.
Thank you.
