I think we figured it out, Auntie. They're still pullets, and Bo's still a cockeral.

So, to get back to the beginning, when does a chick become a pullet?

Chick is generic. Pullet or cockeral is their gender. All baby chickens are chicks. When you sex them they are still chicks but they are also either male or female = pullet or cockeral.
