When is it safe to say newly hatched chicks are "out of the woods?"

I had 3 hatch a little early and after laying around like they weren't going to live for about 12 hours, I came home from work this afternoon to find them standing (albeit clumsily), pecking at the food and each other, drinking and moving and preening a little bit. One of them isn't very steady and sometimes falls on its back and hollers for a minute but for the most part they look lively. Is it safe to say they are going to make it? They are about 30 hrs old now.

Just from my own personal experience, I can say that 3 days after hatch, they have all made it. No guarantees though of course and as far as the little clumsy one, some of mine do that too but as long as he can get back up on his own and what not he should be fine. As long as they have good navels you should be safe

So far so good today. I am spending a little time with them sprinkling food and tapping the water with my finger so they know to eat and drink. One is already scratching in the dish with its feet lol! I just haven't seen them fill their crops yet but they seem strong and happy. They came earlier than expected but they are about 48 hours old so after the weekend I hope I can rest easier! Whew! This is one nervewracking job being a surrogate mommy!

Don't worry, they sound like they are doing just fine. Just dip their beaks into the water/food and they'll figure out the rest. My last hatch with cochins, frizzles and Seramas took a few days longer than normal but even they are thriving so rest assured you have done a wonderful job and your babies will be okay

I had a Serama, twice now actually, that wasn't even able to walk for 2-3 days then just got up and went crazy so never lose faith my friend!
