When to process, Jumbo white pekin?

I'm thinking about getting some white pekin and jumbo pekin ducks some for eggs and some for dinner. Just wondering when the best time to process? Thanks.

here in nicaragua we are overrun with Moscovies..

they can put on alot of weight but they do it slowly...the chinese are doing a moscovyXpekin hybreed that shows the best of both world, but using the unusual moscovy drake over a the more prolific egg layer pekin..the meat of this hybreed is said to be very lean...
