When to thin the flock

I have 25 3 month chickens, of that number I have 12 roos. My intent was to thin down to 2 roo's. I have De's and RIR and they have been on layer mash since they got off chick starter and foraging for a month. At what age can i thin them down and still get decent chickens for the freezer?
Things are starting to get a little tense in the flock. They have plenty of space inside and outside the coop, but I am not sure how much longer before behavior really starts going downhill.
As I had said I had planned to keep two roos, but in my original order, I got a bantam roo instead of an ordered hen, and I was gifted a free chick, that also turns out to be a bantam roo. So, I will be keeping 3 all together.
Developmentally, the only roo that is crowing is the Egyptian Fayoumis that was supposed to be a hen. Can a bantam mate with a full sized pullet?
 
We are taking out white rock rooster this friday to be processed and they are 12 weeks old. They could have went last week.

Yes you can mate a batam with a full size hen. I heard it works out.

They will taste better if you get them fat instead of thin
