Mmmm... Braunschweiger. It is usually pork liverwurst, but they do make some out of beef. Just because its an emulsion type sausage like bologna doesn't mean it's made out of odd parts.
 
My husband bought the stuff that I can't spell and the label said beef jowls, hearts and by products. He has not eaten it since. Baby.

It's all edible regardless. I can remember my grandmother frying up beef tongue and making herself a tongue sandwich everytime we butchered out at my grandparents' farm. The funny thing is, she grew up in the heart of the city and moved out to the farm in her mid 20's when she married my grandfather.
