Why does my incubator fluctuate so much?

I had my incubator on all night and this morning I reset my thermometer. When I came home, it was at 102 which I know is too hot. It said the max temp reached all day was 102 and the lowest was 93. How would it go down 9 degrees? Is something wrong with my thermometer. I had it on all night and it was 102 and when I got home it was still 102 but said throughout the day it dropped 9 degrees!!! What's going on

Also how do I calibrate my thermometer. I can't put it in water because it looks like this and I can't find a sensor or anything. http://www.acurite.com/weather/thermometers/digital-humidity-temperature-comfort-monitor-00619.html
 
I would go buy separate thermometer and hydrometer and calibrate them so you know everything is accurate.

I also have another question. I find it really hard to change the humidity in my incubator. If I put too much water in it goes way down, and if I take a bunch out to where there is none or it is just soaked in the sponge, it barely rises any. How can I get a drastic change to go up?

what brand of incubator are you running? some of them are a little tricky-take time to set-and need time to settle

It's just one I made myself. I'm using a 25 watt bulb also
