Will eggs hatch without "lockdown" ?

I am currently incubating some orphaned turkey eggs. I have no idea when the hen originally set the eggs or how long they had already been incubating. If I leave the eggs on the turner, and keep my humidity around 50%, could they still hatch ? Or do I need to try and guess when to put them on "lockdown"?
