We bought our baby chicks on August 8th of this year, and I’m curious—will they start laying eggs during the winter, or will we need to wait until spring? I’d love to hear from others who have raised late summer chicks!

Usually spring hatched chicks will lay through their first winter. Some people manage their hatchings in order to have eggs over the winter.
The time to maturity also needs taking into account. My most recent wait for pullets to lay is eaight months.
I think it's very unlikely your pullet will lay this winter.

They'll be six months old in March. I would expect to see eggs right about then. But as @Ridgerunner says, "with living animals you don't get guarantees." They could lay before or after that. They'll lay when they're ready. Sorry!
