would a 5x3 shed work for three chickens?

An adult chicken needs at least 2 square feet of floor space. So 5x3 is 15 square feet. So yes that's 5 square feet a piece. My run gets muddy when it rains so I keep straw in their run to toss on the ground.

i just want them to be happy so i want them to have as much space as possible in my tiny backyard. i’m glad a 5x3 would work

Full size birds. You're right at minimal space IF you had to lock them in. But I think you're in good position to turn in into coop/run combo. With proper security measures for your predator load, you would never have to close the door.
