not the keel u are removing the backbone from the tail to the neck cut as close as u can to both sides of it and remove it completely...

I suspect he is just a really busy man and u got lost in the shuffle of life... unfortunately very few breeders do this for a living so they have to work the "Chicken thing" around there very busy lives... so when u are a customer that is used to big company costumer service and big box stores...

Where are u located??? i have 2 adult pairs and a few chicks...

to me the extra time required to pluck is not worth it... i can skin and spatchcock and have ready for the fridge in about 9 min per bird... u have to cook it different when there is no skin as it dries out allot more but i normally use the crock-pot or oven bags...

they look good so far... any BC in there background??? most of the Lav's today have BC in them...
