So, the clicking is back now. He's eating and drinking a little on his own, but still weak. As soon as he's done eating he goes right back to his fleece bed and sleeps.

I give my chicks hay to scratch in and eat when they are about a week old, along with free choice grit. Its the cutest thing to see them get so busy. If you think about chicks hatched in their "natural habitat", they will eat right along with the hen, so why not let them do the same in a cage...
I have 2 leghorn hens. I don't have a lot of birds, so all my chicks got a lot of attention from an early age. The leghorns are the most affectionate of all my hens. I would say that any breed that is raised with lots of human interaction will be friendly.
Hopefully the news is that your birds have better living conditions, as in large flight cages with natural substrates and perching instead of tiny barren wire boxes.
