Agressive Tom Turkey - What Should I Do?

Any tips for how to cook him? He's almost a year old. Do you think he'd have tough meat?
It should be fine. I have a neighbor that got a 4 year old from me that was nice and tender. Make sure to let it rest in the refrigerator or an ice chest for 3 days before cooking or freezing.

After scalding at 160°F, I pluck and then remove innards. After that I soak in a cold salt water solution for around 8 hours before refrigerating.

I prefer mine stuffed and roasted with all the trimmings and bake for the appropriate amount of time based on weight at 325°F.

There are many other ways to cook them though.

I have found the toms get a nice fat cap on the breast that bastes the breast as it cooks.
I cook like r2elk said. I have had a 4 year old tom. He wasn't tough. I did have to rest him for a week before the joints were loose. But he tasted great.
