Cut lemon rind into strips, bring to boil(several times with fresh cold water each time) drain set aside. Bring equal parts water and sugar to a boil. Add lemon peel. Simmer minimum of 4 minutes. Drain liquid and save. Cool peels and toss in granulated sugar to "candy". You know also have lemon infused simple syrup. Enjoy both of those.
 
Slow braised pork ribs. I'll make some gochugong(sp?) Bbq for them when I get home.
