We do the same thing. Temperament is my number one criteria. Then laying ability. I won't tolerate a mean rooster, and a hen that doesn't lay can't stay......... except Phyllis our Polish hen

the little butt in the top pic of him is the runt pullet. she is so tiny next to him, may put her in with my silkies when I divide them up in a few months. the older girls hatched early last summer and are 5.5-6lbs now, so they still have some growing to do.they are teasing me with those little red faces......hurry up and lay already, lol
 
I read once that Brahma roosters can breed less hens than normal. I'm not sure why, but I recall reading it. So the ratio to hens is lower I guess.
