I'm not wild about cheddar, I usually buy Gouda for everyday use, sandwiches etc.

I'm not as huge of a fan/connoisseur , but I do really like cheese.

I LOVE blue cheese on salads, burgers, etc.

I LOVE a really sharp cheese on a lot of things... especially nachos!

Only ONE?.............hmmmmm tough one. Probably pepper jack. Or Gouda. Dang! I can't just pick one!

I'd have to agree with the majority here. Gouda is absolutely amazing. Smoked. Man that stuff is good. I could definitely live on it.

Everything in these posts sounds delicious. If I have a favorite, it's probably one of the blues. One of my least faborites is regular old yellow cheddar, and yet I love Vermont white cheddar.

When I was a kid, my father always had a little Liederkranz around. Of course, at first I thought it was awful, but ate some at times as I grew older. (It's similar to limburger, if you're not familiar.) I believe I'd love it now. I haven't seen any for sale since I moved south, half a lifetime ago, and I've looked.
