Feeding Microgreen ROOTS ok for hens?

I am growing wheat grass for my rhode island red hens. Because of my gardening habits, the substrate I have most available for this is perlite, which they grow fine in. However, the way the perlite mounds up as it grows actually makes it easier to just rinse the perlite off the roots rather than try to cut it down low like I would with something even across like rock wool, which is just financially out of the question for this volume, and the perlite is reusable.

Is there any problem with feeding the greens, roots included? I couldn't find a whole lot on the nutritional information on the roots, so while I know they won't hurt the birds directly, I don't know if they will take up tummy space that will deprive them of the nutrients they would get by eating something else.
