Last night was seafood enchiladas.

No KFC around here, I don't think they could compete with all the Amish buffets that have chicken. The grocery store also has pretty good chicken in their little restaurant.

I love seafood enchiladas! Last time I had them at our favorite Mexican restaurant, they had changed their recipe and they were pretty bland. I'll have to find a recipe and make them at home from now on.
Last night was homemade pizza.

Pete still makes me smile!!

It is hard to believe that he is 11 years old, the stinker took off on hubby this fall and disappeared for over 4 hours. All neighbors know him - he is the only "white" dog for miles, so if anyone found him he would be returned, but he must have stayed in the swamp. He came home dirty, stinky and full of burdock. A very tired, but very happy dog. Good thing he likes baths, lol!

Stuffed peppers, mac and cheese, and sweet corn.

Broiled salmon with garlic lemon butter and a salad. This healthy eating is gonna kill me - I’m at the end of day one!
