Ingredients:


4-6 med. cucumbers, chopped
4-5 roma tomatoes, chopped
2 avocado, chopped
1 med. onion, chopped fine
2 lbs. cooked salad shrimp
2-4 med. jalapeno peppers, chopped (optional)
2 limes (juice)
1-2 bunches cilantro, chopped
salt to taste

Cooking Instructions


Coarsely chop all vegetables and herbs. Mix all ingredients in large bowl, and squeeze the juice from 2 limes over it. Add salt to taste. Serve with tostadas or tortilla chips and enjoy! No cooking required! ***Jalapenos can be completely omitted or substituted for any other type of pepper *** ***Shrimp can be substituted for 2-3 6 oz. cans of tuna*** This is a very fun dish. Very simple to make. The amounts of ingredients are flexible, depending on the size of the vegetables, and your personal tastes. The majority of the dish should be cucumbers, with the shrimp being second, tomatoes, avocado, onion, and so on. None of the ingredients should be overbearing when complete. Works as a main or side dish.
