Ingredients:


1 Slice Bread
1 lg. Egg
2 tbsp Butter or Margarine
dash Salt & Pepper (optional)
1 slice Cheese (optional)

Cooking Instructions


Spread butter lightly on both sides of bread. Next, use a small round cookie cutter or cup to cut a hole in the center of the bread - keep your circle! Put the slice of bread in a large frying pan - med/high heat. Next to the bread, add your bread circle. Put 1/2 tablespoon of butter in the cut out circle of your bread - this will help from the egg sticking. Egg goes into the hole in your bread. Wait until egg appears to be well cooked (thick white color) on the bottom before turning. This will prevent the egg from running. Quickly and carefully flip your bread, and the bread circle. Cook egg to preference (over soft, over well). Salt & Pepper to your preference. Optional slice of cheese can be added during last minute or two of cooking. Serve the dish hot with the toasted bread circle on top of your bread or to the side. Your guests will enjoy using the bread circle to scoop up lost yolk.

Note: For multiple servings, butter all bread slices and cut centers out before frying up the first piece. If you notice egg white running out from under the bread, use a spatula to push that back to the bread. For a healthier dish, use a substitute butter and egg white only. If you can't leave off the cheese, then try low fat cheese.
