I found this great idea for cooking hard boiled eggs. And it works. It even makes it easier to peel a fresh egg without putting baking soda in the boiling water. That is the way I used to cook my eggs. If you put a tablespoon of baking soda in your boiling water while boiling the eggs, it will break that membrane and make it easy to peel the eggs. That is old news, right.
But, this article I found really works. I bake my eggs in the oven in a muffin pan. I use a 6-muffin tin. But, you can also use a 12-muffin tin. Preheat the oven to 325 degrees and cook for 25 minutes. They are perfect. Of course, that depends on your oven calibration. Mine gets temperamental occasionally.
