I keep this beans at all times in containers in my fridge and freezer. I used them mostly for breakfast burritos or quick dinners paired with rice. They are also very good with nachos or on tostadas. I even had them as a soup after adding extra water. They are very tasty and my favorite bean recipe!
Ingredients:
2 cups uncooked pinto or black beans (rinsed, and soaked overnight)
6 cups water
2 bay leaves
1 TBSP ground cumin
1 TSP ground coriander
1/2 TSP cayenne
1/2 TSP black pepper
1/2 TSP dried oregano
1/2 TSP dried basil
1/2 TSP dried dill
2 1/2 TSP salt
3 TBSP light vegetable oil
1 chopped onion
1 chopped green pepper
4 gloves of garlic
1/4 cup butter
1. Messure the beans, water and bay leaves. Bring them to a boil, reduce heat and simmer, partially covered. stirring occasionally. Cook for about 2 hours or until beans are soft.
2. Measure the spices and salt and mix them together so they are ready to use. In a frying pan heat the oil. Add the onuon, green pepper, and garlic and saute for about 3 min. Add the spices and salt , and saute for 2 more minutes, stirring frequently.
3. Remove the bay leaves and mash the cooked beans until smooth. Use a potato masher. Add the vegetable-spice mix. Add the butter.
4. Continue to cook over very low heat for 30 min to blend the flavors. stir often.
