Can someone recommend any of these that would be useful for a beginner? I'm new to chickens, but did take a genetics course in school so I'm not totally in the dark about the general concept.

What are your favorites? And why?

An Introduction to Color Forms of the Domestic Fowl: A Look at Color Varieties and How They Are Made by Brian Reeder

Genetics of the Fowl: The Classic Guide to Poultry Breeding and Chicken Genetics by F.B. Hutt

Genetics of Chicken Colours: The Basics by Sigrid Van Dort - David Hancox & Friends

21st Century Poultry Breeding by Grant Brereton
 
Genetics of the Fowl: The Classic Guide to Poultry Breeding and Chicken Genetics by F.B. Hutt is 50-60 years old but free on line.

You can add Creative Poultry Breeding by Clive Carefoot, and
Poultry Breeding & Genetics Ed by Crawford, both are about 30 years old.

An Introduction to Color Forms of the Domestic Fowl: A Look at Color Varieties and How They Are Made by Brian Reeder;Genetics of Chicken Colours: The Basics by Sigrid Van Dort - David Hancox & Friends & 21st Century Poultry Breeding by Grant Brereton are all recent publications

Genetics and Evolution of the Domestic Fowl by Lewis Stevens is more of a Senior High textbook.
