I was searching around a bit early this afternoon and came across this USDA publication dealing with consumable eggs. It goes into *lots* of detail on grading eggs, conditions of eggs, what can be wrong with eggs, blood spots, rots, candling pictures, etc.,.

It also includes several good pictures of commercial eggs production...looks very "industrial".

Anyhow, I figured somebody might be interested in it.

I thought it was pretty good, both for the information on grading eggs *and* on the images of the commercial eggs facilities and of the example cracked and candled eggs. Enjoy.
