Emergency! Cookie Recipe needed!

Crisp Toffee Bars


1 cup butter or margarine
1 cup brown sugar
1 teaspoon vanilla
........
2 cups flour
1 cup chocolate chips
1 cup chopped walnuts

Thoroughly cream together butter, sugar and vanilla. Add flour, mix
well. Stir in chocolate and walnuts. Press mixture into ungreased 15
1/2x10 1/2x1 jelly roll pan. (I just use my big rectangular pyrex
baking dish). Bake at 350 for 25 minutes. While warm, cut into bars or
squares. Cool before removing from the pan.

I have some "white chocolate" chips. Anyone have one of those super dark almost black cookie recipes I could use them in?

I have some andes candy chips too.
 
How about Whoopie Pies? Kid's love them, they are pretty easy... Main thing is you need marshmallow cream.... which may not be common for you to have around. I always have it because of Fudge!

Anyway here is the recipe.... the filling is soooo good!


Whoopie Pie

6 Tablespoons of Crisco
1 cup of Sugar
1 Egg
1 cup of Milk
1 teaspoon of vanilla
2 cups of Flour
1.5 teaspoons of baking soda
5 Tablespoons of Cocoa
1 t salt


Cream together the crisco, sugar and egg, then add the milk and vanilla.
Blend in Flour, soda, cocoa and salt.

Drop by Tablespoon on an ungreased cookie sheet
Bake at 425 for 5 minutes ( they get done quick!)
Cool

Filling

1/2 cup margarine
1/2 cup crisco
7 Tablespoons of Marshmallow Cream
1 cup confectioners sugar

Mix until light and fluffy on medium speed.
Frost bottom of cookie, stick to bottom of another cookie and you have a WHOOPIE Pie!

Chewy Brownie Cookies

2/3 cup crisco
1 1/2 cup brown sugar
1 T water
1 tsp vanilla
cream together

Add 2 eggs

Add 1 1/2 cup flour
1/3 cup cocoa
1/4 tsp. baking soda
1/2 tsp salt

Mix well. Add 2 cups semi-sweet chocolate chips

Bake at 350 for 7-9 minutes. Cool on sheets for 2 minutes before removing. Makes 4 dozen.
 
Chewy White Chocolate, Chocolate Cookies

1 3/4 cups flour
1 1/4 cups cocoa powder (I used Hershey's Dark Chocolate Cocoa Powder)
1 cup white sugar
3/4 cup brown sugar
2 tsps. baking soda
1 cup butter
2 eggs
1 tsp. vanilla
1/4 tsp. salt
2 cups white chocolate chips

1. Preheat oven to 350 degrees and grease cookie sheet. (I used a cookie sheet with wax paper)

2. In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add eggs one at a time, beating well with each addiction. Add the salt and vanilla.

3. In another bowl, combine the flour, cocoa and baking soda and gradually add to the creamed mixture. Fold in chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheet.

4. Bake for 8 to 10 minutes until fluffy but still soft. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
 
i had stored this from cooks.com. a big hit here at our house, with or without the nuts.

1 pkg. white vanilla chocolate chips

Heat oven to 350 degrees. In large mixing bowl, beat butter, sugar, eggs and vanilla extract until light and fluffy. Combine flour, cocoa, baking soda and salt; add to butter mixture. Stir in nuts and white chocolate chips. Drop by teaspoonfuls onto a greased cookie sheet. Bake 8 to 10 minutes or just until set. Cool slightly and remove to wire rack. Makes 3 1/2 dozen.

Soft & Chewy Chocolate Bites

4 squares BAKER'S Unsweetened Baking Chocolate
3/4 cup (1-1/2 sticks) butter (margarine: see below)
2 cups sugar
3 eggs
1 tsp. vanilla
2 cups flour

PREHEAT oven to 350°F. Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Stir in sugar. Blend in eggs and vanilla. Add flour; mix well. Refrigerate 1 hour, or until dough is easy to handle.
SHAPE dough into 1-inch balls; place, 2 inches apart, on greased baking sheets.
BAKE 8 min. or just until set. (Do not overbake.) Let stand on baking sheet 1 min.; transfer to wire racks. Cool completely.




Pineapple Squares
(makes 25 squares)
oil and flour aerosol spray
3/4 cup (299) juice-packed canned pineapple chunks, drained
1 large egg
1/2 cup (80 ml) unsweetened pineapple juice
1/4 teaspoon (1.25 ml ) orange extract
1 tablespoon ( 15 ml) vegetable oil
1 1/2 cups (211 g) flour
1 teaspoon (5 ml) baking soda
1 teaspoon (5 ml) baking powder
1. Preheat oven to 350°F (180° C, Gas Mark 4). Spray an 8-inch (20 cm) square baking pan with aerosol spray.
2. Measure out 1/4 cup (100 g) of the pineapple chunks. Puree until smooth in a food processor or blender. In the bowl of an electric mixer, beat together pureed pineapple, egg, pineapple juice, orange extract, and oil. Add the flour, baking soda and powder and beat again Stir in the remaining 1/2 cup (199 g) pineapple chunks.
3. Spoon the batter into the prepared pan. Smooth the top and bake for 25 minutes until a knife inserted in the middle comes out clean. Cool and cut into 25 squares.
