    Mine are BBB, I started them in a tractor and when they were big enough not to get taken by hawks I turned them out in the pasture next to the camels.

    ...or what to call the most special day I EAT it! lol. I never used to refer to Thanksgiving as Turkey day before... but I think I will now that I will be eating our first home raised turkeys!

    The ones I will be freezing, should I rest them in the fridge for 3 days before freezing or just go ahead and freeze?

    Yep, rigor mortise had not even set in. The dark meat is tough. So, if I let it go though rigor mortise and become soft again, it will be more tender?
