I am considering buying a few more chicks this week. Should I stick with the same breeds, or will any new chicks be ok to mix with my existing birds? Will any new birds follow suite of not laying in the Winter or is that more of a quality of the breed?

I believe so. I am buying egg laying feed at the local feed store. I mix a ratio of feed and cracked corn 2:1. I also throw kitchen scraps in the coop.
