I read it on the facebook page that you can tell the gender of a chick if you hold it upside down for a few seconds. If it just hangs there with little to no fight, it's a Male, if it freaks the hell out the whole time, it's a female. This seems mean to me. Is there any truth to it?

Well...that's not really what I was hoping to hear. I always thought and I have heard you really dont want a large number of roosters. With the Millie being a rooster, I'm up to 3 now out of 13 birds.
We live on a hill that is made up of sand, very fine sand, the flock just loves free ranging and rolling around in the sand. And they go nuts when I pour out old water on the ground, not a lot, maybe 8 oz, but they just love it.

We are using starter grower from atwoods mixed with cracked corn. They also free range for about an hour a day. We dont let them run around too much outside the coop because of their size. We have a pair of hawks that lives close.
