Sapphire gems are sex linked with cockerels being barred.. what you're calling polka dots. So that one is a cockerel, presuming the "breed" is accurate.

However, regardless of egg color your hens feather patterns do not match any of the colors in the standard of perfection and therefore even if comb type, beard, and skin/shank color were correct they would still be Easter...
While I also don't see any male specific saddle feathers in those pics.. I will note parthenogenesis aka self fertilization is a (known) possibility in poultry.. they may even start to develop embryos.. rarely making it all the way to hatch, but those that do hatch are usually male progeny...

It's difficult to tell from the photos, but her crop looks like it might be inflated.. which should not be the case if she's not eating or drinking.. but could be a cause of those symptoms if it's somehow gotten blocked or become sour. When you feel it, is it flat...
Weight loss is only an indicator of relative humidity coupled with shell porosity and is not an indicator of the embryo growth within.
