Ice baths (shallow bins full of ice), fruit pops, freeze corn and other treats like cut up grapes in ice. This is how we keep ours cool. We also hose down their dirt run to make it cool mud - they love it
pour a lot of hot pepper flakes in it and seal the hole - you can also use hot sauce as well - they hate that. But that is only if your chickens can't access it by accident.
She might have a bad liver - chickens that spit up water tend to have liver issues - ask a vet for an xray to see if her liver is enlarged. That would explain the change in color of the poop as the body can't detox itself.

This is Winnie. She hatched with a locked knee and twisted foot. We aren't even certain of her breed - she came from my daughter's school. The farmer was going to destroy her. She's a good little bird though!
