    I agree with everybody else, the production red is a pullet. I'm not sure about the blue cochin, but it's most likely a cockerel. There's a chance it could be a pullet... I'm not 100% sure.

    It's most likely a predator. Maybe a raptor flew by? Next time it happens, look to the sky to see if there's a bird flying by. If there isn't any, look around the place and see if you find some fox or raccoon (if you have any where you live.)

    What I do is I cut the feathers on one wing only. That way, they don't have the balance to hop over the fence. But don't cut too deep into the feathers. Look at this picture. I'm not sure if it loaded... but that's where you should cut the feathers at. You can do it with any good scissors...
