From experience i can tell you that the toms will be plenty meaty and the hens less so at 20 weeks. Toms are about optimal at 30 weeks. I prefer to let hens go closer to a year for yield and extra eggs.

With turkey poults if they arrive stressed you are fighting an uphill battle to save them. If they arrive in good shape they will thrive if given high protein food, clean water and a heat source. Don't mean to oversimplify but that has been my experience.

Depending on the severity of the gash she probably needs to be separated from the tom. It will only get deeper with breeding attempts. May want to put in a couple of sutures if it is realy long and deep already.
