Great idea! By stall pellets, do you mean like the basic wood pellets they sell marketed for horse stalls? I've used those for my chickens before.

I am concerned about the mess, because I suspect even though the sides are fairly high they will inevitably fling sand out as they bathe in it lol

Sounds like a crop issue, or respiratory. chickens cannot vomit so anything leaking from their beaks means their crop is sour and overflowing or it is discharge from a respiratory infection.
