Bring water to a boil with a pinch of salt in it.
Gently with a spoon, lower the eggs into the boiling water.
Let the water come back to a rolling boil and boil eggs for 14 minutes.
Run under cold water until you can...
I agree with Ridgerunner. Go to any store that sells canning supplies and get the "Ball Blue Book of Canning". If you can't find it in that book, it has no business in a jar.
Last night, I took some brown eggs right out from under my Rhode Island Reds and Black Sex Links into the house and tried putting them in boiling water with a little salt for 14 minutes.............. 5 out of 6 eggs pealed just like the stale eggs at the grocery store. Incredible.
Couple of suggestions....................
1. Bake the jars and get them really hot before you put the food items in.
