First thought would be the bloom is getting disturbed and causing the eggs to go bad. Experiment by collecting fresh eggs and putting them in the fridge abd using them as normal. Very very few thibgs cause an egg to turn black on the inside.
How often do you ser thr "bloody droppings"? Blood should not be occuring, however birds do shed intestinal lining fairly often and thesr poos can appear "bloody" but are perfectly normal.
How are you handling and storing them? If the bloom js still intact nothing should be able to get inside the egg. Of course it could be already inside the egg , in which case i have no idea. Refrigerating right from the start may help

I use the brighttap on 2 gallon insulated cooler, works like a charm. I am using it for 5 hens and full it lasts close to a week, though i check it every day.

Make sure u do the switch ag a time u can watch then for a while. They will be fine without water for a few hours, but u do want them to figure it out. So make it the only water source and then every 10 minutes or so draw ther attention to it until they figure it out.
Have you taken away all other water sources? I just tapped a nipple with ny finger to get their attention a few times, they had it figured out in about 20 minutes. Key thing is it needs to be only water source
