How long can I leave an egg....

How long can an egg stay under a broody before it starts to develop? The reason I'm asking is I have 2 broody hens but I don't want them to hatch anything, I'm collecting eggs for consumption. I don't want to crack one open that has a baby started, but most days I can't collect until almost dark.
